MILENA This vinegar has been elaborated with a special coupage of Cabernet Sauvignon and Grenache. The whole process, from the vineyard to the bottling, is a handmade process. That’s why we proudly present you this high quality product. Elaboration: After resting in steel oak casks for a minimum of three years, the wine is transferred to 4 casks of different woods: American oak casks: 4 year-old casks where the vinegar rests for a minimum of 6 months. French oak casks: 5 year-old casks where the vinegar rests for a minimum of 6 months. Beech casks: over 90 year-old casks with sediment in almost half of the butt and ideal to turn our wines into vinegar due to their high concentration of acetogenic bacteria. Chestnut casks: over 100 year-old casks. As the staves of the casks are old, the vinegar will be a maximum of 6 months in them. The fact of aging the wine in different sorts of casks allows the vinegar to extract different wood tastes, becoming really complex and elegant. Milena vinegar 88 has rested under optimal conditions for a minimum of 6 months. Bottling: It has been manually labelled (including the numbers). The production is very limited (5,000 bottles), and the vinegar is presented in elegant bottles. Tasting note: Bigarreau cherry coloured with brick-red tonalities, very clean and nice. Complex and rich in aromas of leather, vanilla, spices and rubber. It is tasty, acid, powerful, and it has got a remarkable length in the mouth. |
