AMADIS 2004 Amadis of Gaulle was a noble knight, son of Perion and Elisena, archetype of the chivalresque perfection. He victoriously fought against giants and hideous beings to get by his lover's side. The Amadis 04 vintage ranks among internationally well-reputed wines. This wine is a pleasure for the taste and the smell as red fruits and fine vanilla fragrances successively emanate from it. Its strength, due to extremely pure tannins, perfectly makes up with strongly flavoured dishes. Coupage:
It is nevertheless a wine that will be point starting from February of the 2008, it is especially elaborated to keep. The expected evolution over the coming years should bring the following results:
To obtain the quintessence of its qualities, this wine has been ageing in brand new oak barrels and refined with fresh white of eggs following the ancient tradition of Mediterranean people. The vine is cut off from September 17 to October 3 and pressed by the afternoon over the same days. Only 50% of the grape is made used of (must) to achieve the quality at its utmost. The wine ferments slowly in stainless tanks during 15 days at a constant temperature of 27ºC to extract the very best of substance and colour (three daily remontados from the second day of fermentation). The wine is poured into new medium grade roasted 225 l. French Allier's region oak barrels during 10 months to achieve an optimal oxidation and a perfect merge between oak and wine; To capture the voluptuous mix of wood and vanilla flavours while strengthening the bouquet provided by the grape itself. The wine will settle for months in conical bottles of 75 CL. under optimal conditions of light, humidity and temperature. 20.000 bottles of this particular vintage have been hand-numbered and 1.500 magnum bottles (1,5L.). The wine should be decanted two hours before tasting to grasp thoroughly at its utmost intensity. |
